First we infuse Rosemary in the vodka and overnight, the needles soften and release their waxy coating that protects the herb from the hard sun. From here, we chop it very fine and press the rosemary scent into the butter fat, which in turn perfumes the shortbread cookie. Cardamom, salt and vodka spike the savory shortbread and the result is a sparkly cookie that is a pleasure to eat.
