I've made your meringue cookies 4 times now. I like them, but I've found they end up a teeny bit dry. I switched out the flour for a TBSP of cornstarch and they seem to be better. I'm looking for a more squidgy texture. That said, seeing as I've made them this many times you know this recipe is wonderful. Thank you for it.

Hello Nicol, I'm so pleased to hear your enjoying the Bokkenpootjes. Yes, you're right when you say that adding cornstarch lightens the texture. What you're doing by adding cornstarch is cutting the protein in the AP flour. The result is a lighter, more airy texture. It would be as if you used a cake and pastry flour. I don't spec' a lighter flour because it can be a little trickier to work with and not everyone can find it. Anyway, thanks so much for letting me know of your success. Makes me really happy.
