Pretty, crispy and yummy! Who would have thought to cook the eggs first! These make a beautiful hostess gift for a dinner at a friend's house.

I love the idea of rolling these into a log - and using cooked hard-boiled eggs, what an idea!!! I've never tried that before. Part of the cookie process that I love is actually making the cookies, and making them with people I love. These would be so fun to make this holiday season - cheers to participating in this cookie exchange together!!! :)

My husband and I are birders too. We're keeping a universal list. That's how crazy we are! I digress. Toasting flour is a technique I learned while studying Creole cooking. Toasting flour reduces its thickening agency, or it inhibits gluten formation. In the low humidity environment of cookies, toasted flour works like a charm to create a crumbly texture.
