Can I make the cookie head of time and then fill them closer to use? If so, how long will they keep?

Hello Madelyn, Yes, of course you can prepare the cookie prior to filling. If you do, store them in an airtight container, preferably in a low humidity environment. A better idea is to freeze the baked cookie. This would, of course, be your best option. You could even fill them when they're cold. You'll get the best reaction (that is the goal) if you serve them at room temp. The butter and sugar will be relaxed and the flavour will be its best. Let me know how it goes.
